From the Beginning
Upon the completion of a 4 year apprenticeship in Commercial cookery in 1997, at a leading 4 star hotel chain In Adelaide, I headed to Western Australia on a working holiday. When I arrived back in my home town of Adelaide I decided I would like a change of culinary scenery and looked at Kangaroo Island.... a place I had often come to, to have a break, explore and go fishing!
Within a month I was working at the Bella Restaurant in Kingscote utilising the great produce available here at our doorstep. What was meant to be a seasonal job turned out to be a 6 year stint on the rock. It was there in 2009 I was internationally recognised by the " Disciples of Escoffier" earning myself a Chef Hat at the end of a dinner showcasing the best KI had to offer.. A great night!
